Twice-Baked Sweet Potatoes




How about bringing something different to your table this week for you and your family to enjoy? This clean eating recipe - Twice-baked sweet potatoes are twice super delish with extra vitamins! 


Ingredients:

2 medium-large sweet potatoes
1 tbsp. extra-virgin olive oil
1/2 yellow onion, diced
3/4 cup stemmed and copped Tuscan kale
1/4 cup plain Greek yogurt
1/4 cup grated Parmesan
2 tsp. chopped thyme
1/2 tsp. fine sea salt
1/2 cup crumbled feta

Here's how to do it:

Make sure you preheat the oven to 400 F.

1. Rinse sweet potatoes and prick the a few times with fork.
2. Place them in a baking pan, roast until tender for 45-60 minutes and let it cool for 20 minutes.
3. In a pan or skillet, warm oil over medium-low heat then sautee onions until soft for 5 minutes then add the kale and stir for 1 minute.
4. Slice sweet potatoes in half lengthwise, carefully hollow out with a spoon and place flesh in a bowl. Add kale mixture, yogurt, cheese, thyme, salt then mix.
5. Spoon a quarter of the filling into the potato skin, top with feta and return to roasting pan. Bake until the cheese melted or golden and the potatoes are warmed, 15 to 20 minutes. Cool and serve...and enjoy!
