Red Cabbage, Blueberry and Chickpea Salad with Tahini Maple Dressing

Ingredients
  • ½ a red cabbage, very finely sliced
  • 1 cup raisins
  • ¾ cup pepitas
  • 1 can chickpeas, drained and rinsed
  • 2 handfuls of organic field greens per person
  • 1 small handful of blueberries per person
Instructions
  1. Mix up the chickpeas, pepitas, red cabbage and raisins in a large bowl.
  2. Place the field greens in each serving bowl and top with the cabbage mixture and a handful of small blueberries.
  3. Top with Tahini Maple Dressing.
  4. Serve and enjoy!

Tahini Maple Dressing

Ingredients
  • 3 tbsp tahini
  • 3 tbsp fresh lemon juice
  • 1 tbsp apple cider vinegar
  • 2 tbsp maple syrup
  • 2 tbsp extra virgin olive oil
  • ½ tsp garlic powder
  • ¼ tsp salt, or to taste
  • ¼ tsp pepper, or to taste
Instructions
  1. Whisk all ingredients up in a container or mix in a blender.
  2. Store in the fridge.
