White Bean Blondies




INGREDIENTS

  • 1½ cups cooked white beans ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup maple syrip
  • 2 tsp vanilla 
  • ½ cup + 2 Tbsp rolled oats
  • ¼ cup greek yogurt
  • ½ cup vanilla chips or your choice of toppings


INSTRUCTIONS

  1. Preheat over to 350F. Prepare baking pan with parchment paper.
  2. Combine all ingredients in a blender or food processor till fully mixed or combine. You may still see traces of oats but the rest of the batter should be smooth.
  3. Pour in baking pan and bake for 15 to 20 minutes or until golden in color. 
  4. Let it cool and serve.
