2 Crockpot Recipes for the Holiday


Crockpot recipes are perfect for all of us balancing life, family, work, and responsibilities. With a little prep work, you can put all the ingredients in a crockpot, leave the house for a few hours and come back to a fresh, hot meal! The number of crockpot recipes is overwhelming. There are so many options; it’s hard to know which ones to try first! These two crockpot recipes will make a great addition to your regular food plan and can be added to the dinner table during the holidays.



Garlic Mashed Cauliflower (Potatoes)
This crockpot recipe is a great way to have the comfort food satisfaction of creamy mashed potatoes, without the extra calories and carbohydrates! It will complement Christmas dinner so well. Mashed cauliflower has grown in popularity this year, which makes sense; it’s so delicious! Sometimes, however, the mashed cauliflower can become too dry. Use this crockpot recipe for perfect mashed cauliflower every time:


  • 1 head of cauliflower
  • 4 garlic cloves, peeled
  • 1 bay leaf
  • 3 cups of water
  • 1 tsp salt
  • 11/2 tbsp butter
  • Milk (if desired)
  • Salt, to season
  • Pepper, to season


First, chop the cauliflower into florets and set in your crockpot. Next, add the garlic, bay leaf, some salt, and water. Now, cook on high for 2-3 hours or on low for 4-6 hours. The cauliflower should be tender and soft. Remove garlic cloves and bay leaf. Drain the water. Add the butter to the cauliflower and let it melt. Next, use a potato masher to mash the cauliflower to your desired consistency. You can also use an immersion blender for a creamy version. 

Add milk a tablespoon of milk for a creamy texture. Add salt and pepper to taste. Serve with chives or scallions! Enjoy!



Chia & Blueberry Breakfast Quinoa

This crockpot recipe is a delicious and nutritious way to start the day. Any family that may be visiting over the holidays will love waking up to this crockpot recipe. Set the crockpot before bed and wake up to a fresh, hot, satiating breakfast! Here’s what you’ll need:


  • 4 cups coconut milk, unsweetened
  • 4 cups water
  • 2 cups quinoa
  • ⅓ cup chia seeds
  • ¼ cup honey
  • 2 cups blueberries


This recipe is super easy. The only step is to put all the ingredients together in your crockpot and mix them together. Then set your crockpot to low and cook for 6 to 7 hours. Enjoy!
