Flourless Almond Cookies








Ingredients

1 cup organic evaporated cane juice
2 cups almond flour/meal
1 tsp vanilla
1/4 tsp pure almond extract
2 egg whites
1/2 tsp ground cinnamon
1/2 cup finely chopped almonds
more almonds for toppings

Procedure


Make sure oven is at 350°F. 
In a bowl, combine all ingredients except almond toppings. Stir well until combined properly until dough holds together.
Form into 1 1/2 inch balls and roll into the almonds. Transfer in the baking sheet, flatten it and bake for 20 minutes or until it’s golden brown.
