Spinach Balls





This is a great appetizer and get more protein in!

Ingredients:

220 grams/ 6 cups of fresh spinach leaves
3 eggs
1/2 cup grated cheese
1 cup Gluten Free Panko Crumbs
1/4 of fresh herbs of your choice
1/2 tsp. garlic salt


Method:

Preheat oven to 180 C.
Wash the spinach leaves well.
In a bowl or saucepan, add the spinach leaves with salt and cover with boiling water.
Cover and let it sit for 3 minutes.
Then drained and wash under cold water. Drain well.
Then finely chop the spinach.
Transfer into a bowl, add eggs, cheese and herbs of choice and crumbs.
Form the batter into balls and place in a baking tray.
Bake for 15-20 minutes or until golden brown.
Serve immediately!
