A Top Source for Health and Flavor: The Sweet Potato

The point is, the sweet potato tastes so amazing and is so good for your body! It’s also pretty easy to add into your daily diet - the basic ideas below are a great starting point that you can keep simple or add your favorite ingredients to make your own unique dish.

4 simple, adaptable ways to enjoy sweet potatoes:

1) On the grill: After washing and peeling, simply slice the sweet potato into rounds, toss in coconut oil and add spices like salt, pepper, rosemary and garlic. Lay the slices on the grill and flip periodically until soft and golden brown. This is a great side to dish to throw on the grill while cooking up your chicken or burgers.

2) In a Scramble: I like to dice the sweet potato pretty small and fry up in a pan with some diced onions, butter and rosemary. Then, add eggs and any other meat, veggies or spices that sound delicious to you. You can add cheese, avocado, cilantro or any finishing flavors to the scramble. This is a great protein and energy infused meal to start your day off right.

3) Mashed: The mashed sweet potato is a perfect side dish or snack on a cool day. Scrub the sweet potato, rub it in some oil, fork a few holes in it, wrap in tinfoil and bake in the oven. Depending on the sweet potato, it can take up to an hour to become soft. Once it is soft, let the potato cool for a few minutes and then scoop out the insides and toss the skins. Mash up the potatoes with butter - add cinnamon for a sweet flavor or salt and pepper for a more savory taste.

4) In a Stir Fry: In olive oil, sauté cubes of sweet potato, broccoli and other veggies and a meat or tofu to make a delicious stir fry. Add as many or as little spices at you would like. This is a great dinner dish to serve on top of rice - super filling!
