Clean Eating Cherry Pie


Ingredients:

Crust:
1 cup whole grain spelt flour
1/2 cup oat flour or 2/3 cups rolled oatsground in food processor
1/4 cup corn flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp allspice
1 medium sized banana mashed
4 tbsp ground flaxseed
2 tbsp maple syrup
2 tbsp canola oil or other preferred oil

Filling:
4 cups cherries fresh or frozen
1/4 to 1/2 cup agave nectar depending on the sweetness of the cherries
pinck of ground vanilla or few drops of vanilla extract
1/4 cup cornstarch dissolved in a bit of water 


Method for crust:

In a bowl combine all dry ingredients and mix. In a separate bowl mix all wet ingredients very well then combine wet and dry ingredients till you can form a dough form. Wrap it in a foil or saran wrap and chill for a few minutes for 30-6o minutes while you prepare the filling.

For the filling, add the cherries in a large pot with agave nectar and vanilla, bring them to a boil and cook over a low heat for a few minutes. Add the cornstarch till it is a bit thick. Take off the heat once it is boiling. 

It's time to assemble! Prepare your pie pan, grease it and also prepare your oven to 400 F.
Roll out 2/3 of the dough to fit the bottom of the dish, roll it till about 1/8 inch thick. Stab with fork and pre-bake for a few minutes, 8-10 minutes.
Then while it is baking, roll out the remaining dough and cut it into shapes you desire to cover the top of the pie. 
Remove the pie dish from the oven and add in the cherry filling and add in the top of your crust. Bake for 15 minutes then cover the pie with aluminum foil and then bake it again for 30 minutes, remove the foil after 30 minutes then finishing baking for 5 more minutes. Yum!
