Clean Eating Gingerbread Cookies




Ingredients:

1 1/2 cups almond flour
3/4 cup tapioca flour
3/4 tsp ground ginger
1 tsp ground cinnamon
1/8 tsp ground cloves
1/4 tsp real salt
3 tbsp coconut oil (melted)
2 1/2 tsp pure maple syrup
3 tbsp molasses 
1/2 tsp vanilla extract

Method:

1. Prepare your oven and preheat it at 350. Prepare your baking sheet lined with parchment papers. 
2. In a bowl, whisk together the almond flour, tapioca flour, ginger, cinnamon, cloves and salt.
3. Add in coconut oil, maple syrup, molasses and vanilla to the dry ingredients and beat with a mixer. Mix it till you form a good cookie dough, what's great about this recipe is that since it doesn't have gluten you do not have to worry about overmixing it and having tough and hard .cookies!
4. Using your hand form the dough into a large ball. 
5. Place the dough in the parchment papers and roll out the dough to 1/4 inch thickness and let it sit in the refrigerator for 30 minutes.
6. When it is ready, get your cookie cutter and the fun begin! Get your kids to do this and make the gingerbread men and set them in the baking sheet. Bake for 10-12 minutes. 
7. Once it is cooked, let it cool before decorating with icing.
