Clean Eating Chocolate Truffles with Espresso





Ingredients:

12 oz. dark chocolate chips (90% cocoa or higher)
7 tbsp of coconut milk 
1 tsp of vanilla extract
1 tbsp of ground espresso (don't use instant!)
Toppings of your choice: chopped nuts, coconut flakes or cocoa powder)

Instructions:

  1. In a bowl that is microwaveable, add in chocolate chips, coconut milk and vanilla.
  2. Melt the chocolate for 30 seconds, remove from the microwave and stir then do the process again until it's smooth.
  3. Add espresso to the chocolate mixture and stir until well combined.
  4. Refrigerate it for up to 3 hours. 
  5. Remove from the refrigerator and form it into balls. Roll the ball in the toppings of your choice - enjoy!! Perfect for New Year's Eve treats!
