Healthy Chocolate Pecan Pie




Ingredients:

Filling:

  • heaping 1 cup of chopped pecans
  • 2 tbsp molasses
  • 3/4 cup maple syrup
  • 2-3 tsp nut butter of choice (almond butter for me)
  • 1/4 cup flaxmeal whisked into 1/3 cup of water
  • 1/2 tbsp bourbon or 1 additional tbsp of water
  • 1 1/2 tsp pure vanilla extract
  • 1/2 tsp salt
  • optional: chocolate chips, nutmeg and more pecans for toppings
Crust:
  • 1 3/4 cup wheat flour
  • 1/2 tsp salt
  • 1/3 cup coconut oil
  • 1/2 cup cold water


Method:

For this recipe you may opt to use store bought crust or make your own healthy variation :)
For this recipe, I use my own recipe of wheat flour, salt, coconut oil and water, I mix it all. Stir till it forms a dough. When working on it, if you feel like it's a bit too dry you may add more water or oil or if it's the opposite, add a bit more flour. Press into pie dish, bake for 10 minutes at 400 F.

Now for the filling, mix all together except the toppings. Let it rest inside the refrigerator for atleast 30 minutes. It will thicken due to the flaxmeal. Pour into the crust. Top with chocolate chips or more pecans. Bake for atleast 35 minutes. Then turn off from the oven and let it sit inside the turned-off oven! Then serve and enjoy :)
