Jack-o-Lantern Stuffed Bell Peppers





Do you want to balance out the sweets and healthy food this Halloween? You can start by creating these healthy stuffed bell peppers!

Ingredients:

2 chicken breasts
1 tsp cumin
1 tsp garlic salt
1 tsp chili powder
1/2 tsp black pepper
1 can diced tomatoes with green chilies

stuffing:
Bell Peppers of your choice
2 cups Mexican rice
shredded cheese
1 can black beans (rinsed and drained)

Method:

1. Prepare your slow cooker, add the chicken at the bottom of the slow cooker and sprinkle the seasonings on top of it. Then cover with the tomatoes. Cook for 6-8 hours (perfect to do this in the morning if you wll be serving it at by late afternoon or night!)

2. Shred the chicken and mix it with the sauce it created inside the slow cooker.

3. Boil water and while you are waiting for it to boil, clean the bell peppers, cutting the top for a lid. You may cut face like Jack-o-Lantern and once ready, add in the boiling water till tender. Once tender, remove and set it aside.

4. Cook the rice according to directions. Once cooked, mix the rice, shredded chicken, cheese and black beans and scoop inside the bell pepper. Then bake at 350 for 20-30 minutes! Serve and enjoy.
