Clean Eating Pumpkin Mousse




Ingredients:

1 cup coconut cream
1/2 cup canned pumpkin puree
2 tsp pumpkin spice
1/16 tsp pure stevia powder

Extras:

1/2 cup chopped pecans & roasted green pumpkin seeds
1/2 cup coconut whipped cream
dash of cinnamon

Method:

1. To get coconut cream, leave a can full of fat coconut milk overnight in refrigerator and by morning you can carefully scoop out the coconut cream from it.
2. Then in a bowl, add in all ingredients then using a mixer, cream it till fluffy!
3. Taste it to make sure sweetness is according to your liking or add more spice to it if you like it with more of a kick.
4. In a mason jar, add pecans and pumpkin seeds. Top with mousse on top. Then on top you may add a scoop of coconut whipped cream and spinkle more pecans with dusts of cinnamon! Yum :)
