Coconut Mango Ice Cream




Ingredients for the ice cream:

1 cup canned full-fat coconut milk
3 cups organic mango, frozen
1 tbsp maple syrup

Raspberry sauce (optional)

1/3 cup raspberries
3 tbsp maple syrup
1 tsp chia seeds

Method:

1. In a food processor or hi-speed blender add in coconut milk, frozen mangoes and maple syrup and process till it is very creamy like a soft-served ice cream. Scoop it into serving dishes.
2. For the sauce - you may puree the ingredients all together in a food processor (you may do this beforehand) then add on top of the ice cream when serving. Enjoy!
