Raspberry Blackberry Coconut Parfait




Ingredients:

1 1/2 cups fresh raspberries
1/2 cup fresh blackberries
1 can of full fat coconut milk, left refrigerated overnight
1/2 tsp vanilla extract
1 tbsp maple syrup
optional toppings: nuts or coconut flakes

Method:

1. Get the can of coconut milk that was left overnight in the refrigerator, once you open it you will see the cream separated from the liquid. Pour off the liquid. Scoop the coconut cream and add into a bowl and whip it to the consistency of a whipped cream. Add in vanilla and maple syrup.
2. In a bowl, mash in 1 cup of the raspberries and fold in half of the whipped coconut cream. 
3. Get a parfait glass then layer in the raspberry mixture, raspberries then blackberries then add the remaining coconut cream. You may garnish it with some more berries on top. Serve and enjoy! 

You may also do this with other berries of your choice :)
