Healthy and Gooey Apple Pecan Bars




For the crust:

18 dates
1 tsp cinnamon
3/4 cup almond butter
1/4 cup maple syrup
1/2 cup shredded unsweetened coconut
1/2 cup whole pecans
1/4 tsp salt

For the toppings:

1/2 cup whole pecans
1/4 cup coconut oil
3 apples, cored and thinly sliced
1 tsp cinnamon
pinch of salt

Directions:

1. Add in all crust ingredients in a food processor and process till very fine and well combined. Transfer into your prepared pan and press the crust evenly. Chill while we do the filling.

2. In a pan or skillet, medium-low heat. Add the whole pecans and toast it for a few minutes 5-8 minutes until you smell it's aroma. Chop it and set aside.

3. In a larger pan, add the coconut oil, add in the sliced apples, 1 tsp cinnamon and pinch of salt.

4. Cook until the apples are a bit soft and flexible then allow it to cool.

5. Arranged the apples on top of the crust, add in the pecans on top then drizzle with the liquid from the cooked apple. Refrigerate for a few hours until firm and serve. Yum! Perfect Thanksgiving treat for your family and friends!
