Veggies for breakfast? Why not! Often times we choose to opt for oatmeal based meals and eggs for breakfast. I found this recipe online by WholeFork that is inspiring. Haven't tried yet but I am planning on doing one of these days. Below is the recipe, I hope you enjoy it when you make it! I am also highly looking forward to trying this out.
What you need:
1 tbsp coconut oil
1 smal zucchini, spiralized
2 eggs
salt
pepper
seasonings
What you need to do:
Melt coconut oil in a frying pan over medium heat.
Saute zoodles for just a couple of minutes.
Crack the eggs on top of the zoodles, and cover pan with a lid.
Check that the zoodles aren't burning on the bottom.
For a soft yolk cook for approximately 4 minutes.
Season with salt and pepper and you fave seasonings herbs like basil or parsley!
